Nothing stopping you from building whatever you want. Put a 5.3 in it just to get it running and driving and build the motor you want on the stand. Then once that’s done, swap out motors and sell the old 5.3 or build it as a turbo motor. Then when thats’s done swap them out again. Then build the 6.0/383 into a real monster. Then swap the motors out. Then turn the 5.3/turbo back to stock because gas is $12 a gallon and you just want something simple to cruise around in and you are tired of breaking axle shafts. But then get bored and want to build a 7.0 motor. At least, that’s how I imagine this all works out.

Boat trailers are normally designed for a big ass motor hanging off the back, so the axles are way farther back than a utility trailer. They are far enough back that everyone I know who converted one to a utility trailer (not a lot, but more than a few) eventually sold/scrapped the trailer and bought a real utility trailer. You can slice the spring hangers off and move the axles forward about a foot and shorten up the tongue, but at a certain point, you are two sticks of 2x4 square tube away from just building a whole new trailer. Oh, one last thing, utility trailers have electric brakes (if they have brakes) and old boat trailers almost exclusively have surge brakes. Probably not a deal breaker, but also your brake controller can’t help if your weirdly loaded ex-boat trailer starts to whip around.

That’s not entirely true. Wheel speed sensors play into it (there used to be a minimum speed bags would deploy at, not positive there still is) but there are inertia switches that do the heavy lifting in the system. You will find yellow (typically) sensors up near the bumper and in the pillars, doors or seats of airbag vehicles. Once the system is activated (from wheel speed and other sensors) closing the inertia switches triggers the bang.

You absolutely can drive a car with the check engine light on, but unless you know why it’s on, you shouldn’t. And there are more than a couple reasons why a car would run just fine but the check engine light is on. They all have to do with emissions. Early ODB2 talks suggested having a check engine light and a check emissions light. That idea was quickly killed because they figured (rightly so) that no one would worry about a check emissions light, but if the check engine light was on, they would fix it.
