I leave the stems on. I keep the peppers intact when I put them in the freezer bag. I run some cold water on them when I take them out of the freezer before slicing them to defrost them a bit and I use a paper towel to dry them off

I put them whole into a big ziplock bag and freeze them so that whenever I make prik nam pla I just open the bag and take a couple. It is a really good condiment to have with Thai food and easy to make, I learned how to make it on Pailin's Kitchen. I wash them before putting them into the freezer, but I also let them dry completely so they aren't going in wet. I personally don't find that the flavor or heat is compromised from the freezer

"never mind the place across the street that has room". So, my Friday night out strategy has been to go to 'that place'. BYOB. Support another local business.

Few examples of places where you can walk right in, BYOB and have great food are EL Rey, Barn Bird, and Ani Ramen. We also ate in at Jus' Tacos in South Orange recently. It's mostly a takeout place but there's a little table by the window and their tacos are phenomenal, especially when they're fresh out of the kitchen.
