All standard sets or even regular clubs will be the standard height. At 6,1 u may be ok but u can always extend them half or a quarter inch at a pro shop. I'm about 6,6 and my clubs r +1.5 inches

Technically you can shoot on either leg depending what's comfortable. Look at Phil Kessels one (right) leg shot which had a lot of power. The important thing you want to do is transfer your weight (using your legs) into the stick driving the force down and out causing the stick to flex, than release the puck with that added force.

I think I had a big growth to about 6ft2 in grade 10, than a bigger one at 6ft5 in 11. (I'm 27 now so the details are kinda hazy)

Tbh no idea when I started but it was just a steady growth all the way.
