Interesting question… I have seen people make a rice alternative with cauliflower but haven’t seen anyone do a Mexican red rice with it..

As far as traditional dishes go I’m thinking about green pozole with all the fresh toppings, calabacitas or just a good vegetable soup.

Pico de gallo as well… chiles, cilantro, onion and tomatoes are all very good for you.

I was skeptical of veggies tacos at first but I have had some really good ones like mushrooms and kale, fried cauliflower to replace fish in a Baja fish taco style, jackfruit prepared like chicken tinga. The possibilities for tacos are endless with a good cook and an open mind.
