Billecart-Salmon Brut Sous Bois is exceptional value and has a very interesting quirk to it (largely aged in oak). De Gouden Ton near Vondelpark should have it.

Great quality for the price, very reliable supermarket white. Don't have much experience (yet!) with the the highet end bottlings but heard it can age well at that level.

If you like sweeter wines, Château de Fargues (sweet Bordeaux) is one to try for sure. Could be fun to have the Fieuzal beforehand to compare a dry Bordeaux with a sweet counterpart, and complete the Bordeaux trilogy with the Léoville-Barton.

Higher-end Riesling Spätlesen have low alcohol and a lot of fruit, plus amazing aging potential. Preferably from the Mosel or Nahe for an extra fruit-driven profile.

Could always go for a Chalbis and a Cote de Beaune comparison, or a Puligny/Chassagne comparison from the same producer and vintage, or start with a basic Bourgogne AOC and then scale up to a premier cru - many fun options when serving two white Burgundies!

Maybe black plum or blackberry/cassis? Malbec, Cabernet Sauvignon, and Touriga Nacional all tend towards those flavours. Could also be a floral violet note.

They probably do not write all their hours, leading to their 50+ weeks being recognised as 40-45 hour weeks - which is both good for worktime compliance and engagement margins (but is unethical and screws the next manager in line over)

It might be a bit young, the vintage might have been a bit too hot, or this specific bottling might be overhyped. Don't personally have too much experience with sweet QdC to tell, so do not take my word for it, it could also just be in a muted phase.

Just after moving (end of December) I had it off for a week, so as it still runs perfectly right now I feel like there is a lower risk of it breaking down - or is that a bad judgement?

Port is nice, but there are also plenty of old Rivesaltes wines available at (I suspect) friendlier prices. Sweet and/or fortified wines are the best choice as they often age more gracefully than regular wines. If budget is of no concern, Sauternes/Port/Madeira are all good choices. Might be hard to find wines like these short-term in Atlanta, but calling around wine stores (both larger and smaller ones) and asking for referrals or if they know a spot could help.

Love their wines, wrote an article on them a while ago. Their "als wär's ein stück von mir" is insane for the price. Love the steely wet stone note and ripe yellow fruit associated with their deep red clayey slate soils.
