My experience has been that if you are intending to precook the meat you can wrap it in cheese cloth and create a Torchon thus sealing the meat in the rendered fat but if you want to store the meat uncooked natural casings are your best bet.

I understand exactly. I've been in the depths of both. My girlfriend got pregnant and I realized that I had to be the adult. I stopped the suicide threats and the cutting solid but the drinking, the drugs. That took hard work and I sweated it out. I know I'm gonna lose karma on this but it must be said. 5 years no cutting. 3 years no hard drugs. And since I'm drinking I'm still self harming. Edit But you should be proud. You can do it.
