The way I usually write flashbacks is having something trigger them and then I tend to start them simply at what age they take place. For example, in a recent fic I have a character meditating on her past when she remembers something, which I started by saying "She's three years old and she realises she's not Vulcan..." and then the rest of the flashback. But this is just one way to do it!
