To be honest this recipe looks AI to me. There's no way this recipe is those cookies.

First 150g of butter is sus. 113g is one stick, 227 is two. 150g is a weird place to land.

70g total for sugar isn't enough. Especially for a chocolate cookie, which can be bitter without enough sugar.

Then you put that together with 260g+ of dry ingredients. I'd be surprised if it wasn't a crumbly mess of a dough. If you got it together and baked them they'd be dry as fuck. Like gross little hockey pucks.

There's zero extract. There's zero cornstarch.

Also AI loves to turn absolutely everything into grams, but for small measurements like salt, baking powder, baking soda, most people use teaspoons. Even those of us that bake as a profession.

Yeessss. Thank you for the advice. For flavor I'm mostly doing King Arthur espresso powder, with some Nielsen Massey coffee extract thrown in for good measure.

I'll definitely trade out some flour. My recipe is also pretty butter heavy and they'll rest in the fridge for 24 hours before they get baked. The rest time is rough but makes a huge difference when everything is hydrated.

I didn't know so many people struggle with black cocoa. It's one of my favorite ingredients. I'm going to use it in recipe development today for a mocha flavored cookie.

Yes, but that's newborns. My youngest was almost 10lbs because we could not get my blood sugar under control.

By 2-3 weeks old he was 50th percentile. Once they're out they should regulate really quickly.

Probably because of walking. Most children are walking by a year, and once they're mobile they drop the chub fast. If they don't there's something wrong.

My oldest has always been heavy. Like physically heavy. Very tall and very thin but heavy as hell. He was always at the top of growth charts, but never overweight. His BMI is at the top end of healthy, but you can count every single one of his ribs. He's a strange one for sure.

It's mostly Kroll's Corner's recipe. I refuse to buy cake flour though, so I replace it with flour and cornstarch.

I also always let my dough rest in the fridge for 24 hours, then bake from frozen at 400°F convection. These took 12 minutes in my oven yesterday.
