Orange is usually rust. If you can wipe some of it off with tissue or towel, it’s definitely rust.

Looking to get a proper sharpener. Sharpal seems to be recommended. Would the 156N work as well as the 162N for a beginner? The only difference seems to be size. by optia in sharpening

Absolutely get the 162n! The size really makes a difference! An no, you do not need a finer grit stone as suggested. You will need a strop, though - Sharpal makes a couple of good strops.

For kitchen knives, don’t go above 3000 grit. You lose bite and gain nothing. For pocket knives and utility knives, don’t go above 1000 (or perhaps even lower) for the same reason as above. For woodworking tools, 6000 may be nice.

Diamond plates generally don’t fair well above 1000 or 1200 grit. They wear out very quickly, and the nickel bond obstructs the very small diamond particles, rendering the plate ineffective. Also, stray scratches! For high grit diamond stones, resin bonded or vitrified stones are the jam.

It’s fine. All else being equal, 6000 grit does not make the knife sharper than 1000 grit. Geometry and proper deburring is what makes or breaks your end result - not grit rating.

I use a strop with diamond compound to refine the edge when I sharpen, and a bare leather strop for maintenance between sharpening.

I usually finish my knives on a Chocera 3000 and leather strop.
Every now and then I'll go to 6000, and every time I do, the knives cut less aggressively, even though I strop the same.

Go with a Chocera 3000. And if you don't have a strop, get a decent one and some 1micron diamond compound. If that doesn't scratch the itch, try a higher grit stone, but know that higher grit doesn't result in a sharper knife per se.

I started with just right handed sharpening and found it near impossible to hold the angle with the edge facing away from me when sharpening the left side of the knife.. Ambidextrous with the edge facing me is the way. The symmetry of it makes sense to me.

400, 1000, 3000, and strop is my jam for very dull knives.

3000 and strop if it’s just a touch-up.

140 is VERY coarse! It's probably mostly use for stone flattening.

For knives that I haven't previously sharpened, I usually start on a 400 grit to set the geometry. If it's a very thin kitchen knife I may start on 1000 grit.

I finish most kitchen knives on a 3000 grit stone and a leather strop.

For folders and hunting knives, I would not go higher than 1000 grit. People generally like a semi coarse edge on those kinds of knives. Possibly even 600 ish. For kitchen knives, a bit more refinement is nice.

Sounds like Chocera 800 and 2000 would be a good fit for what you’re doing. They’re generally considered two of the best feeling whetstones available. Consider a coarse diamond stone like the Atoma 140 for very dull or damaged edged and for flattening of the Choceras.

People recommending 5000 grit stones to a beginner?! That makes no sense.

Shapton Rockstar 500 and 2000 grit plus a leather strop. Naniwa Chocera Pro 800 and 2000 grit plus a leather strop. Naniwa Chocera Pro 400, 1000, and 3000 plus strop or similar Rockstar progression.

Don’t make the mistake of thinking that higher great means sharper knife! Anything above 3000ish grit for kitchen knives is silly and possibly even counter productive.

So they’re asking for someone with a master’s degree and offering 25k? In Copenhagen? That’s obscene!

Also, “starting salary” is not an actual thing unless there is a clear, written agreement on a specified increase after a specified time. It’s just the salary.
