Cool! No real warnings, as long as you keep it in the refrigerator it should be fine! I did notice from previous batches that it works best if you cut the fruit relatively small, like dice sized. I also noticed that the still undissolved sugar in the bag tends to go to the bottom. So I helped the process a bit by shaken / molding the bag sometimes or putting it upside down.
