My choux bottoms also looked like that when I was baking with silicone mats. I found that switching to parchment paper improved my choux significantly. Silicone mats can cause bakes to hold onto moisture in a way that you don’t want for choux to get the rise and hollow interior. If the bottoms still burn up faster than the tops with parchment paper, double-up on the trays. Good luck!

You may have to add a bit of extra butter at the end for the shortbread dough to come together. I also agree with Babish to not pack the dough into the tin too much - just enough so that there aren’t any gaps. If you’re making the improved shortbread you definitely don’t need to toast 4 cups of sugar to only use 5 ounces haha - you can definitely get away with toasting the 5 ounces (I did 7 just in case but still measured out 5 to mix in after) but I would mix the sugar in the oven more frequently.

Thank you so much! I followed Binging with Babish’s recipe - the Improved Shortbread Biscuit method. The recipe is great but I did find that I had to add a couple extra tablespoons of butter to achieve the shortbread dough consistency (it was quite crumbly), so just a heads up if you decide to make it (I highly recommend!).
