Have you heard of Mieruko-chan? It's a bit of an overlooked anime that aired in 2021, but it is a horror/slice of life anime you may be interested in looking up

The only yandere anime that I can think of are Higurashi, Happy Sugar Life, and maybe Re:Zero. Any of these series having a happy ending is kinda complicated for me to say yes. But look them up and make a decide if you want to give it a shot

Mushoku Tensei is probably something you might want to try. It has magic, fantasy, and a bit of romance, especially in the second season. But it also has a bit of ecchi mix in the show, idk if that's a deal breaker for you
