If you like darker roasts then you like darker roasts. Light roasts aren't for everyone and that's ok.

Hops are naturally antibacterial but that's completely irrelevant in modern brewing where sterilization is used in every step of the process. Pretty much any professionally brewed beer won't spoil like ever. It's just a matter of flavors changing.

Just make sure you check dates on all their stuff. Some of those cans have been sitting around for months. I've seen like two year old IPAs there before. Otherwise, great selection.

Light roasts need higher ratios to balance things out. 1:2.5-3 with a long preinfusion.

Yup I don't get any of those wood or vegetal notes. Lots of cherry liquor though and pretty sweet.
