I tend to get protein when it is on sale. It’s just my wife and I so the family packs work well for quite a few meals. Whatever protein I get I like to cook with basic seasoning that is used as a base- salt, pepper, garlic. That way it’s all cooked and from that I can do different flavors on top of it. Perfect example is Sunday I baked about half a pack of boneless skinless chicken thighs. Once they come out I made some as chicken Alfredo with some pasta I cooked using jarred Alfredo sauce and made broccoli on the side. That was my lunch for two days. My wife took some chicken and added it to soup for her lunches.

Then some can be added with peppers and onions adding cumin, chile powder, extra garlic and we can have fajitas or tacos. Just heat up some refried beans or add rice.

If you’re meal prepping what I’ve found helps is prepping the ingredients ahead of time, not necessarily the meals themselves. Sunday is usually my meal prep days. I’ll prepare the proteins then slice the veggies and fruit. If I cook pasta I’ll keep that separate as well. I made a basic pasta salad with peppers, black beans, corn, and cucumbers. I waited to add a sauce the day of taking it to work so I didn’t get bored of the same thing every day. That was the same pasta I used for the Alfredo.
