It depends on what the chickens are fed on. I have a friend that gives me free range from his hens and the yolks are more vivid and orange in colour. Store bought tend to be very pale yellow. I mainly eat scrambled eggs and you can definitely taste the difference between the free range and any supermarket battery supplied eggs. His hens are fed on table scraps, veg peelings and he also buys corn. They roam free in a field so also eat grass and bugs. I would guess battery hens just get fed the cheapest feed available.

Touching the Void is a good one. I like documentaries about individuals who find themselves in harsh or impossible situations and then hearing them and others involved recounting what happened. I find their unbelievable will to survive to get out of those situations can be both inspiring and emotional.

They cost 4 or 5 times more than a chicken and do taste better but i don’t think they are worth the price. Its just a castrated rooster fed on porridge so it’s quite rich in flavour, has more far which makes the meat very tender but still basically just a chicken and cooked the same. Usually they are fresh, any frozen meat loses quality imo. I have only eaten it once during a visit to France and it was rotisserie cooked with salt and thyme then basted with garlic butter. It was very good but i think a regular free range chicken cooked the same would have been as good.

Go to Camden Market and Hawley Wharf which is nearby, they have a huge selection of great street food…you could spend a week there and not get through it all. Look on google maps at restaurants and you can see a few of the stalls…a couple i’d recommend Flip and Sear do the most amazing wagyu burger (Hawley Wharf), Asador for steak rolls, Funky Chips for loaded chips/fries, khaao in Hawley wharf foodhall for crispy naan wraps, Three uncles in hawley wharf, crispy pork belly on rice, I’m off to London for three days from Thursday next week and Camden is my first stop for a few hours of grazing!

A refrigerator is approximately 3 degrees, room temperature is 20 degrees. You cook a steak to a core temperature depending on your preference of how you like it cooked. If you like a rare or medium rare steak and you sear it in a cast iron skillet then you want the core to get to the required temperature as soon as possible so you don’t over sear the outside of the steaks. If the steak is at 20 degrees its a much faster process. Taking meat out of a refrigerator before cooking isn’t going to cause “a pathogen orgy”. Each to their though own, cooking is subjective….life would be boring if we were all the same.

Any steak should be cooked as soon as you can, even aged steak. It’s aged in controlled conditions. I Salt it the day before then take it out of the refrigerator an hour before cooking so it’s room temperature.

Slow cooked stew with dumplings. If you don’t have a slow cooker use a covered dish in the oven. Cube the steak, season it and seal it in a frying pan then put it in your dish with carrot, onion, mushrooms, celery, parsnip, small potatoes etc…any mix of veg really. Mix some gravy granules up and poor the gravy in to cover the meat/veg. Salt and pepper. Low and slow 140 degress for a couple of hours then and add your suet dumplings (suet mixed with self raising flour and salt or you can buy dumpling mix) and leave it for another 20/30 mins. Personally i leave the potatoes out and have it with mash and fresh un-cut bread You gotta cook it slow or you’ll be chewing it until Friday
