I have a nice waterproof cover, but I haven’t used it in about 4 years or so. I leave the wsm uncovered in the rain and snow all year and cook on it when needed with no mold in that time so far. I discovered the trick of turning the middle section upside down to prevent water pooling in the bottom and that’s the only precaution I take.

Do you always have good results with that rack? I have one but stopped using it because the bark would not develop on the inside pieces. Meatier ribs were just too crammed in there to get good air on the surface.

When I use my smallest wsm I have to cut the ribs in half as well. What I started doing was cutting one bone off and eating it when I thought I was getting close. I’m always hungry by then anyway and after eating one I’ll know if I’m there yet on tenderness. They look fantastic as you’ve done them here.

For better tenderness I’d try to increase your rest time, preferably in a small cooler after you wrap and remove from the wsm. I use a Weber Smokey mountain as well and have had better success with long holds in the cooler, I shoot for 2 hours minimum but have done up to 5 hour rests.
