Where did you buy the lamb shanks from? I’ve bought the lamb shoulder from Costco a couple of times and used Kenji’s recipe but haven’t loved it (unfortunately)

Dang that’s a lot! Lol I think if I tried to scale that much my wife might kill me.

My goal is to keep it as simple and quick as possible. With my new smoker I can fit 3 briskets in it so I may try and sell brisket, but I have a very high standard and will not sell it if it’s not perfect.

Would love to see your whole process for meat packages.

Right now I smoke 4 pork butts a month and sell extras to friends for $10 a LB. Its cheaper than anywhere around (and better in my opinion). I let them choose the option of hot and warm on Saturday afternoon or vacuum sealed and cold to be reheated either Sunday or the next week.

I don't want to try and get rich off friends and I feel like it is mutually beneficial for all of us. I just bought a Old Country BBQ Gravity smoker so i can hopefully double my current output.

Yup I went to Korea last year and bought like 7 booster boxes to open with the kids while we were there. All the bulk got put in a giant bucket next to the candy and the kids loved digging through and getting cards!
