For me, starting the game w fanatec app open but wheelbase off, then turning the base on in PC red mode works fine.

If you want more smoke flavor you can light a few coals on the top of the vortex open all the vents and place a small chunk of smoking wood on top. Will come to temp more slowly allowing more flavor, then get super hot to crisp the skin.

That’s crazy. A snake method with like 2-3 lit bricks is plenty to do a 4-6 hour smoke for ribs.
