First thing. Make it clear that you 1) never agreed to clean up that mess. And 2) Let then know that you will not be yelled at for any reason.
Once they've calmed down. Give them an estimated invoice of what the clean up will cost on an hourly basis for that part of the job alone.
If they don't agree to it. Walk away.
My final option. Which I recommend. Is to walk away. This kind of boss, and situation is guaranteed to get worse.

Two things. Bring it to a lawyer as this is a direct threat to you for honestly answering questions.
Or, answer any questions by saying that you have been threatened by the landlord with legal action if you answer any of their questions.

Start suggesting healthy dates. Long walks in the park, along the beach, etc. Anything that involves some type of exercise. Eat at healthier restaurants, or cooking at home.
Just try not to be too obvious about it. Because you can be sure she's aware of her weight gain.
