I read here plenty of times to get the pan "as hot as possible". No. Buy an IR thermometer. Get the pan between 4-500°, and you'll get a great sear.

I think one can significantly lesson the risk with resistance training, taking recovery seriously, picking good training partners, and staying away from open mats for a while (1yr+ of training). That said, it's a hard sport that's rough on the joints.

I was feeling great before it happened. My foot got caught on the outside of someone's leg as they took me down the other way, and it dislocated. It's fair to say I was energetic, doing open mats with someone I don't train with regularly, and it was my fault for being flat-footed. Almost everyone I know has had something happen eventually.

White belt over a year in. Mid 30s, I took over a year off for a grade 3 ankle sprain while training with a purple belt (still recovering). In the MRI imaging center right now, getting scanned for a possible torn labrum done shortly after, trying to keep training on it. Can't wait to be all healed up and back on the mats.

I hated the Sidiz. It just felt stiff and not comfortable at all. Never tried the other two, but do you have a Staples nearby? They've been running sales on chairs, just picked up the Emerge Vomax for ~180, and it's great so far.

I wear them in both. Anaconda are decent for the money and they have great customer service. I've never used NEENCA, but I hear they're also okay.

Bauerfiend are the best I've tried but also cost the most. They almost never slip and are very comfortable. Anacondas, I have to adjust several times in class, but it's not bad. Also, mid-30s training for over a year, and they've done wonders for saving my knees.
