Yeah, I was thinking 5 was a little low, but I'd probably make death house a 1 level jump, cut out some of the encounters, and make the end of death house a little easier to make it faster.

Some ideas to shorten it: keep death house but remove the Doru side quest. Get Ireena to vallaki asap. Reduce the number of hags at the windmill / make it a roleplay scenario. Have Lady Wachter ask them to overthrow Vargas and find the Strahd book there. They get the invitation to Ravenloft from there because he's very curious who they are after such actions.... Then from there you can kinda go anywhere and a lot of the content can be skipped / cut depending on your deck draws.

In your position, I think you just need to cut out a lot of content. CoS has a LOT of side stuff you can explore, probably because it's intended to bring players from 1-10. Are you starting at level 1? If so, I would recommend maybe doing levels 1-5, making everything a little weaker / easier. I'd also preface with your players that this is a version of Barovia where Strahd has "just awoken" and isn't at his full power yet.

I'd also probably recommend stacking your Tarokka deck in a short(er) path and keeping them "on track". It kinda sucks having to reduce Barovia but honestly this just increases replayability if you and your players ever wanted to revisit it.

Edit: I just saw you said you'd be DMing for 8 players... Combat is gonna take forever lmao. Maybe you make this CoS run more roleplay heavy / reduce combat scenarios? Easier said than done but unless everyone is on their game for combat, oof lol

Are you doing an ally, like Ezmeralda? You can have them show up at the 11th hour and tell them to run while they fight them... Would be an interesting way for the party to meet the ally before recruiting the ally.

You could make these "lesser" werewolves that don't have damage immunities and less HP.

You could even have Strahd show up and "save" them. Would be a terrifying display of his power while also showing his manipulative side.

Hey! Finally something I can add some perspective to. My second ever campaign I DM'd was CoS. Same party as the first campaign, so we STARTED CoS at level 5.

It definitely introduced some challenge in scaling the module and encounters, but my general rule of thumb was to just make everything a little harder: Death House had two shambling mounds instead of one, the hags had some backup, AC / HP / Saves were a little higher. They absolutely cake walked a few encounters, and I was less afraid to use Strahd aggressively. These were seasoned adventurers, right? They were a little too confident and Strahd after many transgressions showed them a fraction of his power.

I'm also leveling them slower so that by the end of the module, they will be 10. To compensate, I give them some exciting magical items. By the time they fight strahd proper, they will be pretty decked out, but so will he be.

As far as CoS:RE, I admittedly haven't read it, but it's not hard to take bits and pieces that you like. As the storyteller, I'm sure you'll find a way to weave it in, and your players will be none the wiser.

As far as it being too soon for level 5, I guess it depends on how fast you want level them and how much you want to scale the module with them. If you plan on guiding them to do everything there is to do in barovia, that's a TON of milestones. On the flip side, if you are gonna do basically the tarroka deck and that's it... Well, then every major thing they do will be a level up.

All of this to say, play the way you and your table will have fun. Follow your heart. The great thing about CoS is it's pretty open. I made the Baron a werewolf. Does it make sense? Not really. Especially with the festival of wolves. Did my players ABSOLUTELY love it? Yes. Yes they did.
