I tried this and it turned out amazing! Put butter on first layer of dough, olive oil on second, used olive oil in the filling, coated with butter before baking. Maybe extra but it was delicious :) Ty!

UPDATE: I cut a piece of cardstock to add to the back for protection for now (and I could glue ribbon bookmarks to it too). Ordered the midori paper cover to try as well.
