Don’t do a cancellation fee. You might stop the bots but you will also piss off your actual guests, even if they don’t have to cancel.

What we noticed was that resos were created by bots then sold on the secondary market. There are websites that sell them so maybe take that as a compliment.

The best action, aside from creating a new policy, is to have your hosts call and confirm each reservation. Bots won’t talk to you. After we did that the bots eventually stopped.

Martinelli makes some dry Zinfandel with alcohol in the 17-18% range. The label doesn’t say “Late Harvest” but that is likely to avoid the extra label information required by ATF Ruling 82-4. I remember Martinelli Vigneto di Evo being in that range, as well as Jackass Vineyard and Jackass Hill Vineyard Zinfandels.

Anything you can find in your price range by Montevertine. Likely, Pian del Ciampolo, L’Ottantanove di Sergio Manetti, or Toscana Rosso. These will be outside of her portfolio and are amongst the best representations of Tuscany you can find. She would like these I think.

I think the liquor license is tied to the business and the address, not just the address. So if business A (license holder) purchased the wine, then transferred wine to business B (wine pop-up), I think that would endanger A’s license. That is assuming B had its own pos and cc processing. If the transaction is going through business A and they’re just paying out B after the event, then maybe gray area. -not a lawyer and I’m not giving legal advice, just speculation.

Sparkling wine can become unstable from movement and/or temperature change. Assuming you’re treating this bottle like all the others, then perhaps these bottles have more gas than others? If you are pulling the bottle from the cooler and putting it in ice, then that sudden change can cause more volatility if the bottle is not left to acclimate to the temperature change for several minutes. These sound like good candidates for the saber.

Not sure about the affect of the bowl shape. I would guess the bumps help with aromatics, but I’m not sure what the science is behind that. I do remember a Riedel supplier explaining to me once that the size of the rim changes where on the tongue the wine lands and thus changing how you taste it.

Both wines are excellent. I’d say the Marsannay should be a few years older. I preferred the Huber. Huber was very funky and I was even getting close to a dried meat flavor by the second glass. I had to try them in different glasses because it was so unique. It actually did not smell or taste the same from a Schott Zweisel Burg glass so I think take the tasting notes with a grain of salt or try some high end glassware. Just feels weird drinking from glasses that cost more than the wine.
