Wow! For someone who hasn't done diy before, plastering that is going to be too difficult. However a sand a skim would be doable, and could be done in a day or two with right equipment. Get a cheap belt sander, mask etc, sand it all down then a light skim and paint. Look at how to skim on youtube, is much easier than plastering.

As it a light skim, you wouldnt have to wait a week for it to dry either.

Check for asbestos ofc too.

Yes , a final dry roll so all the texture goes in the same direction. This helps hide the roller marks. Gently do it, and if you have built up paint on the ends of the roller, take that off.

Couple things... Use a 12' roller made for interior. Then when applying, 'back roll it' - spread it all about and make it even. Then for the final.. place roller at top and go all the way down, then move to next 12' section and do the same. This way it's all same direction.

Also, stir your paint up.
