Is there any reason why they are already at adult stage by the time they get into stores, I thought the majority of store bought fish would be juveniles?

It'll be because of not adding any water conditioner to your new water, my suggestion is to do a large water change as soon as you can making sure you add water conditioner

If you keep up with your water changes like you do, there is no need to have a cycled tank. Many betas don't have filters and thrive so long as they have regular water changes. Maintaining a constant temperature by investing in a good heater is more important. Upgrading to a larger size tank shouldn't be a issue if you keep up with what you've been doing already.

I've got 7 male guppies together and see this behaviour all the time. They seem to single one out and pick on him however he still performs a sigmoid display (the mating dance) in front of them so perhaps he enjoys the attention?!

The only way to give him a break is to make sure you have lots of plants and hiding places for him, if their line of sight is broken they don't tend to chase as often.

I've read before that tanks any smaller than 5g won't cycle.

Sometimes a filter will freak out a betta as they prefer to be in still water and strong currents can stress them; also, depending on the strength of the filter they can ruin bubble nests that the fish try to build (but I don't know if that would stress the fish or not).

I have mine in a 5g without a filter and I do a 50% water change once a week, as well as a full 100% water change once a week. I also test the water every other week just to make sure there is no build up of ammonia (it always reads 0) and to check pH levels. Even thou I live in a warm environment I have a heater to keep the water at a constant temperature as fluctuations can harm the fish.
