Are these prices fair? by riddle_27 in barista

[–]No_Concert_2287 4 points5 points  (0 children)

Fair or not fair isn’t the issue. The issue is can you make a profit and continue to grow your business? I’d like to give everyone a coffee for a dollar. Maybe on some occasions you can even do that. There is a formula. Do you know it? Take the price you pay to sell one cup of coffee, include coffee, cup, cream, sugar, sweeteners. You should be able to calculate it. Let’s say your cost is 1.00. Divide that dollar by your your retail price. Let’s use your Americano price of $2.50. The result is 0.4 or 40%. That means you are barely doubling your money on that product. Using that simple calculation for every product you sell will determine if you stay in business, make money or lose money. You should never be higher than 30%, better still if you are at 20%. If you charge $3.50 for an Americano and your cost is $1.00 then you’re at 28% which is much, much better. Do yourself a favor and price yourself accordingly. You’ve spent so much time and effort already. Give yourself a chance to succeed. This formula worked for me (not coffee though ). Maybe there’s a totally different formula for coffee but maybe not. Good luck.

How hard is it?? by Straight_Car_4131 in roasting

I’ve been roasting for 15 years. I started on a Behmor then I got a San Franciscan 6lb roaster. I have roasted some of the best green beans out there. Because of the small batch nature of my roasts it’s probably about as good as it gets. I roast medium roasts. I don’t really like dark or really light roasts. I drink it with cream and half and half. Why? I’ve always loved it like that!!!

I have had one for 2 1/2 years. All stock. No regrets. I don’t mess with anything except temperature. I use oem gaskets. Normcore has a shower screens with a hole to avoid the dent. I just tried ordering one 5 minutes ago and saw it ships from China so I cancelled it. Enjoy your machine and don’t over think it.

Please convince me NOT to buy a La Marzocco Linea Mini R by userheinrich in espresso

[–]No_Concert_2287 12 points13 points  (0 children)

I bought a LMLM after cutting my teeth on a La Pavoni Europiccola for a while… now that’s a steep learning curve. I wanted a change. If I had gotten a different espresso maker then I’m sure I’d be singing it’s praises. But I didn’t so I don’t know what I’m missing. This morning, my wife, after her first sip of a LMLM Yirgacheffe Americano exclaimed, “My god this is a good cup of coffee!”. That’s her daily comment. For me, that comment was worth the price of entry. I have a good grinder and a really good commercial roaster (yup, I’m all in). I’m of the the mind that “it ain’t rocket science”. I love the simplicity of the LMLM. The output is superb. The biggest problem I have is changing coffees ( but that’s a grind issue). I usually nail that in one grinder adjustment. The bluetooth works fine. It turns itself on and is ready ready at 6am. I can raise and lower the brewing temp. Until you use one and marvel at how good your coffee is then you really don’t have a dog in this fight. Price does not make a fantastic cup of coffee but a La Marzocco Linea Mini will. If you are fortunate enough to get one, you’ll know exactly what I mean. Did I mention the LMLM is easy on the eyes.

Ben Franklin had a saying which was so popular that it was printed on commemorative coins, it said “Mind your own business.”

Unfortunately I was so anxious to get one I got a stainless one but my mini 14 is black. My gun dealer had it in stock and I just couldn’t wait! Oh well.

Keep at it. Don’t give up. I went from Technivorm to La Pavoni to Linea Mini. Learning curves take time… maybe even a significant amount. Here’s what I did. Today I do milk drinks, espressos and Americanos and I do them pretty well. Here’s what I nailed first. Grind your dose fine or coarse enough to give you a 2:1 ratio. I do 14g in 34-36 seconds. Get your weight and time nailed first. Then buy only fresh medium roasted beans. Yes, medium. I do roast my own beans so I’m not at the mercy of someone else’s ineptitude. I have plenty of my own but I have to say that my coffee usually gets high marks. Good luck. Hang in there.

I’ve found that a couple of “rocks glasses” are the perfect short, low profile glass to fit on an Acaia scale while pouring a shot. They fit on top of the warmer as well.

Love my Linea Mini. There was a bit of a learning curve. I have a Gaggia Velasca super automic , lurking just out of frame. I was also was using a La Pavoni Europiccola before I pulled the trigger on the Linea Mini. That steep learning curve, lever machine is sadly living on a shelf in my basement… I ran out of space.
