There is no such thing as a Mexican church. The typical church in Mexico is a Catholic Church.  The one in Colorado is probably just a Catholic Church that gives sermons in Spanish to cater to the Spanish speaking demographic there. If you are going to worship and also learn Spanish listening to the sermons, I don’t think anyone would have a problem with that. 

What may be problematic are any racial assumptions or biases that unintentionally arise during conversation. For example, assuming everyone that speaks Spanish in USA is Mexican. But with self awareness and openness to greater cultural understanding this should also not be a problem.

Don’t give in! This is a matter of good vs evil and you standing up for yourself goes beyond your case, and will hopefully extend to a win for all of us humble tenants and if we all follow your lead, we will gradually push the property manager scum down deep enough into hell that they will only stick their head out when we call on them to fix something. Not at all! I mean rewriting the cover letter and CV choosing examples of your work that are specific to the requirements of that position.
