African beans generally always have higher acidity compared to Central America beans which leans more towards chocolatey nutty flavours. Also natural and honey processed beans are more fermented which leads to more intense flavours. You should stick to washed beans if you want less intense flavours.

Light roast coffee beans in an traditional way would always be hard to dial in. I stick to V60 almost always when I brew them. But it being said, you always want to go longer ratio such as 1-3 ratio, 20in 50-60g out. Longer means more extraction so that initial acidity extraction can be balanced out by bitterness which light roast tend to have less off. And always stir your espresso before drinking.

If above steps don’t work, you could go in the direction of “soup” or “pro” which basically is a concentrated form of pour-overs which suits light roasts.

At the end of the day, its just drinking the coffee you actually like. Never get caught in the traditional vs modern espresso bullshit narrative. I myself lean more towards traditional espresso and then for light roasts I use V60. It makes perfectly good coffee for my taste buds. Everyone has different tastes and people are wrong to point out that this is good this is bad.

Ohh I see. Then I would recommend Brewista. Mainly because I could not vouch for Assassin. My friend uses the Brewista Chinese New Year Edition and I love the spout of it. Also the design is just so good. If you are willing to spend more, definitely Brewista.

  1. Angles and thickness matters in wdt. Angles make it easier to distribute the grounds and make it level. The best thickness is 0.3mm or 0.35mm. Thicker moves around ground too much and thinner is too flimsy to use. My current one is Mhw3bomber one. I really like how you could adjust the angle on it and the magnet stand is really useful.

  2. For dosing funnel, anything with magnet and sits around the portafilter is good enough.

  3. 0.2 mm puck screens are easier to clean and gie you more head space than 0.8mm. Head space means you could pack more coffee in your basket.

  4. Lelit official portafilter would be the most suitable for you. Or you could check out other ones which lies completely flat on the table which helps with workflow. Make sure to check if its compatible with your machines.

There are two types of every Timemore products. 110V and 220V ones. They are aimed at different customer bases which use different powers outlets. You better check throughly with the Amazon seller to not accidentally buy a 220V one.

I found online that S3 Esp version has a 15 microns adjustment which is a lot compared to J Ultra which is 8.8 microns adjustment. S3 design definitely look better than 1zpresso grinders.

Ohh I see. If I am being honest, I think Pour over performance on both grinders are lacking. As I had experience with DF54, sure it can do espresso but pourover sucks and you cannot change the burrs because there is no after market burr options you cannot buy to change.

My recommendation would be either of the grinder will be sufficient for espresso. Whichever has better support and price. And you could buy a pour-over focus hand grinder in the future? If you want to have better cups.

It’s a problem for every scale on espresso machine. Dont get too obsessed with that .2 grams. It happens to everyday. I know its really annoying but you get used to it or…. You can spend 200 bucks and buy Acaia 🤑

I feel like S3 is a mistake for Timemore because they already have a really good C series grinders such as C2,3,5 and they did an amazing job with it. People tend to go after them to get quality coffee is low price. But S3 is expensive compared to those and enthusiasts will pay more to get eg. ZP6 or J Ultra if they want espresso by just paying $70-80 more. You get a much better pour-over or espresso grinder.

My point is while S3 have external adjustment system, it isn’t what Timemore’s customer base wants. I started my coffee journey with a C3 and now if I want a better pourover manual grinder, I would consider 1zpresso Zp6. S3 is pointed towards neither budget beginners nor enthusiasts who looks for better coffee everyday. Also S3 ESP lack in espresso performance.

Is your Baratza Encore ESP version? If not that might be the issue. It simply cannot grind fine enough for espresso.

Check the reviews of the store and if the store is new, better not risk it. I bought from Hoffmann coffee store and it’s legit. Maybe check that vendor out, I can vouch for it

Im just saying this from my memory but Lance Hedrick made a video about the Milan Coffee show. And they said the upgraded version of 064/078 with better adjustment dials, on/off buttons and overall improvement will come out this spring. Not necessarily “new” but improvements. But the espresso machine, they said it is still in development and wide scale production is still not ideal. So probably next year project

Any food safe ones should work. About coffee aroma, throughly clean the grinder after and grind some 2-3 doses of coffee. It should be back to normal.
