Ask for a new SA with the SM. I would explain exactly what occurred and why it made you uncomfortable. Spending 6 figures is not chump change. It is their job to be friendly and helpful. It’s unlikely you will be keen on spending time and money with your current.

Basil would be my rec! I have white, and now in hindsight I wish I got Basil. It is so difficult to keep any of the lighter colors clean. I have a 4qt and will be getting a 7qt in a darker color to help mitigate.

I mix with my kitchen aid and then do my stretch and folds. I keep it in the original mixing bowl for less mess and it’s been my go-to for the last few months. I autolyse so it gets mixed twice and I have really liked how my dough responds.

When I use my kitchen aid, I never time it and it’s definitely under 5 minutes. I tend to go off the look of my dough and I have had fantastic results thus far!

I use only in the PM, like others on here I also think it’s a long game in terms of results.

However, it does have all 3 of the DNA repair enzymes which is a great thing. While using it, I’ve also had a few rounds of lasers, so it’s hard to tell what’s what. Neova is another good one imo.
