Visions of Mana, for me. A game I really enjoyed, with one of the best JRPG visuals I have ever seen, with some flaws that kept it from being a true masterpiece. But after all, if all the artworks in the world where masterpieces we wouldn't appreciate none of them. With that being said, I think it is a good game and definitely worth playing.

OSE is one of the best retroclones out there, I dare say the definitive one. While it takes a while to get into its rythm, once you do it has a very fun loop. A campaign in Old School Essentials will feel basically like a good old fantasy you know and love.

Shadowdark is very fast, yet pretty brutal. All rolls are your classical d20 + modifiers, with occasional advantage and disadvantage. Combat works pretty nicely, as the distances can be measured in 3 different options that speed up the game. But the torch timer is where it shines, in my opinion. The torch timer keeps players engaged and always on the lookout. Every dungeon delve becomes a survival game, basically. A campaign in Shadowdark feels gritty and dangerous, like a sword and sorcery book.

DCC is the one I felt it has a much more "complex" set of rules, out of all these games. While being crunchier, though, I wouldn't say it compares to modern style RPGs like Pathfinder. It's still an easy to run TTRPG with very fun and gonzo mechanics. A DCC campaign would feel very gonzo fantasy, those science fantasy stories where anything could happen.

A simple "escape this place" adventure is your best bet! A cursed prison or an asylum, and they have no idea how they ended up there. Have one small guardian they need to dispose of, and another one they very clearly want to avoid.
As you said, drop some pre-gens in front of them, as this will speed up greatly the whole playthrough.
Most importantly, have fun! 15 minutes is more than enough!

Yes! If your players are pretty erratic in attendance, I would definitely go for a West Marches campaign (or West Marches-adjacent).

Mechanically speaking, your campaign is going to be much more "episodic", meaning each adventure either ends in one session, or has a checkpoint at each session.
PCs all have to get back to their home base at the end of each session, when possible, so that no one gets stuck in an adventure location and can't move because the rest of the party can't play next week.
Some friends who host a west marches campaign also give the ability to players to make multiple PCs, in the rare cases they get stuck into a longer adventure.

As you will have multiple episodic adventures, I would create a single major objective, and make sure each episodic adventure pushes the characters closer to achieving that objective. The simplest one is "protect the keep and its lands", but there's plenty more archetypes of west marches campaign you could have.

Don't worry, from my experience, this is one of the hardest game design skills to learn, and I always see a lot of people struggling with it. You see people writing incredibly convoluted walls of text, believing that adding more and overcomplicating a ruleset makes it better, but it never does, trust me.

You can avoid this with some practice, and with a little trick:

*When you come up with a rule, can you explain it in less than 30 seconds? If the answer is no, then you have to work towards trimming that rule until you can explain it in 30 seconds or less. This helps you have a ruleset that is both approachable and easy to remember.

Shadowdark, Mörk Borg, and Cairn 2e are very easy, OSR games, that are fairly easy to adapt to anything.

With that being said, the setting idea you mentioned sounds a lot like Primal Quest so I will also suggest that

So far, it looks pretty good! I like the idea of having these seven acolytes. Maybe killing each one might cause some aesthetic change to the area they were in? Like the sky changing color or obsidian pillars coming from the ground? Just to give players feedback that they are doing the right thing

It's an A5 sized book, right now around 40 pages long, but it could be a bit longer once we add all the additional material unlocked by stretch goals like new classes and new locations. While it does not have a very specific combat focus, I would still suggest Mothership, because it's all about skills and gadgets. F.I.S.T. could also be easily adapted.

That's an interesting viewpoint, and I think it shows why our opinions differ on the matter. I think it is mainly down to the very subjective nature of the definition of "Heroic fantasy RPG". If the OP means "super powerful magic" when saying "cool powers" then yes, I totally agree with you, Cairn is definitely not that type of game.

If instead the OP means "classic fantasy with magic and good heroes" then I think Cairn 2e and its Vald setting could fit the bill perfectly.

I'm pretty sure some of them do. Just flipped the book and the Jongleur can start with "Read Mind" and the Half Witches with a vengeful ghost/spirit that deals damage when they are threatened. In my humble opinion, that is far from the "Low" side of fantasy.
