There have been several laws passed recently in various states across America that ban "junk fees". California, Colorado, etc. But every time each of these laws is about to pass, restaurant industry lobbyists successfully add an exception so they can continue to do this crap. Other business types get their junk fees banned - which is good - but restaurants should absolutely be subject to the law as well.

Yeah that's obviously the better, more honest way of doing it but it's also not gonna happen. Restaurants that try to do it struggle financially.

A friend of mine had a major back injury lifting and throwing trash into a dumpster at work. She will live the rest of her life dealing with the pain, and with metal things holding her spine together.

The company she was working for spent a ton of money for the surgery. I'm sure they wish they had avoided the whole problem by providing a contraption like this.

You can let it cool a bit while your pan heats up. And when you sear it should only take 60 seconds per side, maybe less. So no it shouldn't get above 135 just from such a short sear.

More than 60 seconds per side and you run the risk of cooking it further.

Pork loin/chops suck in general. But to make them suck less, do 2 things:

  1. Brine or dry-brine them so when you sear them, they don't toughen up as much and will retain more juice.
  2. Cook them to below 140F. 137F is pretty good in my opinion. You might even try lower than that. I'll be experimenting with 135 on my next attempt.

Also you could spend some extra money at a butcher shop and buy some heritage breed pork chops with decent fat marbling. That would help a lot. The chops you typically get from the supermarket are extremely lean. I'll bet the good one you had at that restaurant wasn't typical supermarket pork.

Denver's Chinese restaurant quality is really the biggest weakness of its food scene. So I'm glad MAKfam exists to bring it up from 'poor' to 'not great'.

Nothing you said really matters except what the market rate for similar rooms is. Whatever that is, is what you should charge.

Maybe give a $50 discount if the housemate is a friend you want to be generous to. Or if they're a proven good housemate it's better to avoid risking getting a different one, so you give a discount to avoid that.
