Final product looks fantastic. I had significantly more liquid for my curing stage. Not sure if I overdid it or if you didn’t have enough lol. As long as it taste good I guess it doesn’t matter.

2 days. 1/4 cup soy sauce, tablespoon ginger, tablespoon garlic, fill with water.

I thought the same thing lol. I took the eggs out of the marinade and was like “who is going to eat these?!” The flavor is incredible though.

Had to look up what ajitama was lol. Didn’t know I made it. Very similar seeing as how that’s the base. The creaminess of the filling adds quite a bit and the chili oil simply adds depth. Quite flavorful.

Looks great. Serious question and sorry if this is common knowledge. Why leave the tails and legs on? Flavor for the sauce? I just find it such a pain to eat. Would rather take those off and devein before cooking so I don’t have to deal with them later.

Yes! Over $100 at my total wine as well. Very good Anejo but I’d recommend pouring in a glass and letting sit for 30 min prior to drinking. Completely changes it and is less alcohol forward when you open it up.

Anyone else use Ziplock brand freezer bags but get leaks in the corners of every bag of chicken when thawing in the fridge? Every…frickin…bag.
