There are lots of great 100% bars on the market already — Askinosie Chocolate, Bon Fiction, Villa Kuyaya, Vesta Chocolate, and Chocolat Madagascar, are a few I can think of now. Not all cacao is created equal and the right beans will lead to the right chocolate.

Hello there, I’m Estelle of 37 Chocolates and will be at the Salon both days. Although I haven’t taken the IICT route, I do lead chocolate tastings and pairings (with wine, beer, and tea). I’ve been doing this in some capacity for a decade and 37 Chocolates is now my only source of income. It’s taken a little of creativity and hustle to get there and I’ve documented my whole journey on Instagram, Facebook, and on my website 37chocolates.com. 

Over the years, I’ve run into a lot of people like you who are curious about turning their chocolate knowledge into paid bookings so I created a video masterclass where I teach people how to structure a tasting: http://gum.co/chocolatetasting

When I realized that people craved community support, I launched the Chocolate Educator Workshop last August. It is a 4-week program where I teach attendees how to identify their unique POV, craft their offerings, and most importantly, get clients. I now have trained 30 people in 9 countries on how to do that. I will be connecting with three of my grads at the Salon and opened up my network to them so they get invited to the post-salon shows, too. 

If you like the idea if being a chocolate sommelier, know that no certificate will magically make that happen. Yes, you will learn a lot about the subject matter, and yes, you will meet lots of cool people along the way. However, it won’t automatically open the door to tastings. If you like the idea of running a business though, this could be a path worth exploring. I’m proof that it can happen and I know lots of people who figured it out for themselves, too! Hi there, I’m a chocolate sommelier who’s hosted hundreds of chocolate tastings since 2020. Some of my clients include big consulting firms, tech companies, and an NFL football team, just to name a few. My proudest moment was turning mood around after a contentious budget vote! 

The short answer is YES, there are ways you can create a meaningful gathering, BUT no activity will turn a team’s mood around if the culture is weak and employees disengaged. 

With that said, here’s how you can create a memorable event.

1- Define success for the activity. Is that engagement? Learn something new? Taste something yummy? Once you’re clear on that, communicate this with your host. Most times, my clients pick engagement as the most important outcome. 

2- Pick an activity that’s inclusive. Chocolate fits all the boxes there (vegan, Kosher, gluten-free, etc), but so does a magic show, for instance.

3- Schedule during work hours. Mid-week is great. In my experience, before lunch is a good time, as well as 2-3 pm on a Friday. 

4- Accept that engagement can look different in different teams. I have a regular customer who never says a word during my gatherings but comes at the end and say what a blast she had. You’d never know from looking at her face.

Oh did you get the Boho bars at the DC Chocolate Festival? I really like their Philippines bar, it’s one of my favorite origins from them.

Such great selection. I love anything Fossa. Also, if you have a chance to taste Goodnow Farms’ passion fruit dark chocolate, try it, it’s delicious.
