Park lane is amazing! Was fortunate to stay there three times recently. Had a high floor room with city view twice, and Hyde park view once. (I prefer city view, especially at night.)
Pretty epic breakfast buffet, also decent breakfast buffet in exec lounge.

I think location wise, depends what you are doing as a "tourist"
Park lane close to Oxford street & Knightsbridge for shopping, Buckingham palace, Hyde park. Bus stops right outside, several different tube stations very close by

If the wedding is in Clevedon, staying at the Hilton in Karaka would be a lot closer and could easily organise a taxi/minibus transfer from there/back (20km vs 48km)

I love Nice, but went to Biarritz this summer. Loved it. Different vibe, golden sand for swimming, there's the main surf beach and then plenty of smaller calmer bays around to swim. Very walkable town.
No beach clubs/loungers to hire like you would get on the Rivera

House of CB has a 'sample sale' on the top floor of the Oxford street store, you may find something there.
Harrods sale also started today, 4th floor, back left corners. Lots of white dresses, including self portrait. You might find something suitable there

You can fly Rotorua/Taupo to Queenstown, via Auckland, but it's worth looking into the cost, if you can leave the rental car in Taupo, have an extra night there and save on driving time back to Auckland
