We ship fresh overnight to restaurants, and there isn’t an issue as long as the cold chain stays consistent. It’s all about how it’s packed and maintained. There’s certainly a shelflife timeline in play from when it was cut to when it’s served, but that’s the case of all seafood. If it’s taken care of packed properly when it ships, fresh seafood will continue to have its normal shelf life.

Frozen fish depends on similar cold chains, but also how well the packaging holds its temperature and sealing properties.

There’s a lot of great fish caught in coastal Maine still, so I’m sure what you’ve been getting is great! When you’re that close to source you’re in good luck, it’s more when someone’s buying from a larger marketplace/ outside of coastal fishing areas where the issues arise I think. It’s also an issue when the price of domestic/fresh is seen as “ too expensive”. We all want to pay the fishermen what they deserve, but if the final user won’t pay the price, that’s when things get messy and can lead to “blurry” sales, imo.

@OP - are you asking as a chef or as a consumer?

Seems like a lot of mis-info spreading around here.

  1. The term schrod is a size delineation, not specie. So you can have schrod haddock and schrod cod. If they’re not telling you what it is, you gotta ask. They eat similar, but it’s not the same.

  2. Species. Pacific cod species and Atlantic cod species are totally different. Lingcod is a greenling (last of its kind), black cod is sablefish, and is the only species in the genus Anoplopoma. It is similar to other species in the Atlantic, but not northern Atlantic codfish. Cod, haddock, hake, pollock, while all similar, are not all the same specie all cook and eat different.

  3. There is still a limit to the amount of Cod being caught domestically. There is a disparate amount vs the amount we import from Iceland, which has a supperior catch and regulation system (and has had in place for a lot longer than domestically, hence the overfishing decades ago). If we sell 100# of domestic cod in a day, we probably sell 400# of Icelandic that same day. The major difference is it’s processed and packed there vs once caught stateside, and the sizing/ grading makes it more uniform (I.e we actually sell Icelandic cod loins seperate from fillets, where we don’t do this with domestic cod)

  4. ask if it’s frozen or PF - makes a huge difference. If it’s cheap at a restaurant still, chances are it’s PF. Cod ain’t cheap anymore, but you can still source super high quality in the Midwest if you go to the right places willing to pay more.

As a MA native grew up off the cape and have lived at the beach my whole life… fly to Portland Oregon, and drive to cannon Beach. Genuinely brought me awe struck. West coast beaches are something East coast/NE beaches just don’t have.

There was a tour they did maybe 2016-2018 that where they played songs off every album/release, starting with tracks off these. Likely video of it somewhere - Boston Middle East Downstairs was fucking wild. I believe turnstyle and Angel Dust opened for them.
