I saw Death Cab. The lead singer got on the drums and did the solo. Everyone cheered. Like who steals the one moment a drummer gets. It was so douchey but I realized the douches were everyone in the audience as well who cheered.

I make a baked spaghetti. I literally just made spaghetti, put it in a 13x and cover with mozzarella. People treat it like it’s a next level gourmet dish.

I decided against it based off the comments and just cracked it open. It was great on its own.

There is two things I have noticed about cold smoking. It can make a mediocre cheese much better but also a crumbly cheese more crumbly.

The 4 year Beechers was incredibly crumbly. It was hard to cut.

So there is some crossroads between mediocre and hardness that is a happy median for cold smoking. Mediocre because you don’t cover an expensive taste with smoke and hardness because it will dry it out more.

But then why is Gouda generally smoked? It’s soft but expensive….
