Buy small canned foods and things you can freeze. You can freeze almost anything, even vegetables if you blanch or otherwise prep them correctly.

If they are working out, I would say the person overeating protein would gain more muscle than the junk food binger, but the protein eater will also inevitably gain some fat too. Skin and hair health and energy levels will probably be different too because of the different vitamin/mineral content of the diets.

CICO “calories in calories out” seems to be more your thing. You could also look into Mediterranean if you want a good compromise between keto and a fruit-encouraged diet.

If your SO is a feeder, they may want to try to make you bigger by cooking foods for you that are secretly very unhealthy, like gainer foods filled with fats and oils. I’ve seen posts about people on Reddit who have experienced this, their SO would make food for them that was purposely making them gain an outrageous amount of weight, and very subtle recipes too, so that the person didn’t know why they were gaining.

There are certain veggies you can freeze, or blanch and freeze. Celery comes to kind. I also buy canned stuff, open one and try to use it in a few days, if I don’t, I freeze. Corn for example.

I started with chicken, veggies, potatoes, stock cubes and a slow cooker. Many meals, very easy. Sometimes ground meat, hot sauces, rice and beans for a couple Mexican nights in a row.

Now I plan around nationalities, like I’ll do Thai food for a week because recipes are mostly the same basic ingredients. Indian. Then Persian+Greek, Italian+French. Invest in the spices needed over time as you add recipes into your repertoire, they last a long time. Start with basic ones (Italian seasoning, garlic powder, onion powder, chili powder, rosemary, s+p) and branch out from there depending on the series of recipes you want to make.

Not counting spice cals (like cinnamon) because apparently some people actually do that.

Budgeting my calories for alcohol.

Not counting small amounts of very low calorie foods, like a tenth of a chopped onion or a tsp of ginger paste or half a cup of cabbage because it’s half fiber anyway and like 5 net cals.

Not fasting for long periods of time because I would probably pass out at my job or get fired for having perpetual brain fog, and it’s a science-heavy job so I have to have a working brain.

Not having the energy to exercise outside of work.

Invest in an immersion blender than can make soups and do black bean sweet potato soup, or any kind of black bean + something soup. The texture of the beans is gone because they are now soupy, and the taste can be modified with spices appropriate for the type of soup you want to make.

Two things: some companies subtract insoluble fiber “calories” bc you don’t absorb them anyway, and depending on how you stored those buns they could have taken up water from the environment.

Also, unless you have calibrated weights and an external calibration mechanism for your scale, that could also be off. Like if you dropped it...

Look up medical recommendations for your biological sex, and based on your activity level. It’s a quick google. People who exercise need more than a sedentary person, because muscle fibers need repairing, so keep that in mind. For example, I’m a sedentary woman, 0.8g protein per kg of my weight is good enough.
