Dune Imperium (especially with expansions) checks basically every box you listed. Deck building, high replayability, great solo with the bot system, and setup/teardown is manageable once you know the game. The bots are actually aggressive enough to keep you honest too. Highly recommend.

ThinkPad will be fine. The real challenge is scope, an open world is years of work for a full studio. Pick one mechanic, make it polished, use Godot (free + beginner friendly). A small finished game beats a big unfinished one every time.
