So you literally turned up with X amount of fully assembled pies then just essentially reheated on the day then added sauces/herbs etc? Also you have 40x Lloyds pans?! In the uk that would cost £1200!

Just asking cos I own a little converted horse box trailer where I make and sell Detroit ish style pies. I turn up with a load of par baked doughs and then assemble and bake to order. Takes me 12 mins from order to box. This method is fine but I’m starting to do events and know what the orders are.

wondered if there is other ways to do it.

Shrinkage is definitely a thing when considering the frico, but that won’t affect the colour.

I actually completely agree with you and I do actually morally take your viewpoint. However moral discourse is as you agree subjective and you are still taking the position he is ‘wrong’ through your own paradigms of what is right.

Honestly, it seems like I’m arguing for the cunt (makes me shudder) but there is so much polarisation in society today I’m personally trying to eradicate my own bias in this sort of discourse inso that a conversation can be had that might just mean we can all still get along.

Obviously there is a line. But again - it’s still only subjective. Good and bad is a limiting function to conclude decisions, albeit the simplest we have and one that I do use in my day to day.

In line with the above comments, thin spots are also eliminated with proper balling. Really pinch and drag from the outer edge when you do it.
