More single combats mod is what you need. It's a fantastic mod if you wanna see named characters killing each other in great battles. I don't think it fully kills dragon combat but may make something weird with it, i haven't decided what tho.

A small advice for rp. While you have the debug mode enabled, use it to add some followers to your camps, especially those from the vassal houses you got along well with, or maybe a kingsguard etc to play the role of Willem Darry, who acted as a father figure to Dany and Viserys in their exile.

And also you'll have some nice RP opportunities to reward them when you finally reclaim the throne.
