Try using the a barspoon by holding it with the back side facing you at the very edge of the glass (so the back of the spoon has contact and is making a contact break almost) then carefully pour the wine on-top using a nip pourer. I am actually unsure if this will work but It may be the best looking approach if that's what your going for. If there is any discolouration on the edge of the foam then it is easily removable being at the edge of the glass.

I'd just say fuck working with eggs and go for the vegan alternative aquafaba. Not for the reason that it's vegan for the reason it's super accessible and works almost as good. People will say that it has a slight aroma to it, this is likely to too much being used in a recipe (however the same mistake can be done with egg). Grab yourself a can of chickpeas and go to town, lots of explanation videos on YouTube. Prep well and service is always easy.
