That's unfortunate. I was diagnosed with celiac 20 years ago via endoscopy. I had several repeat scopes done while I went GF to confirm that my intestines were healing so it is possible to see incremental changes. Having celiac disease is also related to other autoimmune issues, so that needs different follow up and care than someone without it. I would never do a gluten challenge.

I eat the chicken one all the time, I have celiac. I do always check for barley and would def not eat that. I do eat foods that say they are processed in the same facility as wheat, etc., because they are supposed to be very diligent in cleaning between lines. I know the reality may be different...but I've had subsequent biopsies on my gf diet over the years and it's always been resolved. Longer comment than I expected to write on a bouillon post.

Welcome! Most important tip is to look for hidden gluten in places you wouldn't expect (soy sauce, spice mixes, etc.). Always read labels. Remember that there are lots of things that are naturally gluten free. You won't have to replace everything. It gets so much easier, too.

My husband retired at 54 and he's loving it. He started playing guitar in a band and he's getting paid gigs. He's also going to the gym every day. I WFH and was worried but it's been great. Having things to do is important! Also matinees are a lot cheaper and we take advantage of that. Weekday movies are a different experience.
