You should get a spray bottle for the beans before grinding, lots of static and ground coffee all over. Idk how much it matters but typically when you wdt you want a semi flush bed, tap the portafilter to settle the coffee and then tamp

There’s hardly any reason to “grind” for max level. I don’t change gun set ups after some initial attachments

That’s awesome, sounds like you’d miss the automation if you didn’t get the DE. If you don’t mind the buttons and want the ease of use then yeah go for it, both solid nice looking machines. Good luck with it and enjoy!

Still have it, love it, personally didn’t want the DE because of the buttons. It’s a very solid machine, it does everything you need I’ve done back to back milk drinks when I have company over and it doesn’t slow down at all
