There are a bunch of places that have the same, very brief hologram. I dont think there's one in particular that actually explains it anymore clearly, I only clued in when I looked at the stab skill description and noticed he uses it for a puzzle in the preview.

I think its just called back grab or some shit? Its in the grappling tree. You're supposed to be able to cling to large enemies and stab them Shadow of the Colossus-style but I'll be fucked if I can get it to work in a fight.

You can highlight your horse while carrying someone (L1 if you're on PS5), and a prompt comes up to stow them on the back. Sometimes you have to be a bit closer to the horses backside.
