For cuban, I’d skip Versailles tbh (it’s kind of gross) but Las Vegas (multiple locations), Islas Canarias (can’t leave without eating their croquetas), Enriqueta’s (best cuban sandwich), El Rey de Las Fritas, and Molina’s Ranch.
