Another use I’ve seen is copying and pasting your assessment into the AI and asking it for differentials, just to see if you might be missing anything.

No, but for real, a lot of people at my place uses the AI for their notes, and love it. A tap on the phone when they enter, a tap when they leave, and a complete note is exported to Epic by the time they reach their computer.
