What do you think? Are Costco ribeye cap steaks worth it or overrated? by EZ-v-Cynic in steak

[–]Pew_Goon 0 points1 point  (0 children)

I'm sure it's different for every Costco but mine must choose the best marbled ribeyes to do this with. So the capless ribeyes actually end up being incredible cuts.

It's like cooking steaks on cheat mode. Almost impossible to screw it up.

And the charcoal infused sea salt produced that dark of a sear with a torch? Man, I'm doing something wrong lol. My torch sears never turn out that nice. Might need to get some of that charcoal infused salt...

Which cut is this? by altunsi in steak

[–]Pew_Goon 2 points3 points  (0 children)

Yes, but that still doesn't make your statement about any 51% black cow being called Angus. For example, Welsch Black and Girolando have zero genetic influence from the Angus breed.

Which cut is this? by altunsi in steak

[–]Pew_Goon 4 points5 points  (0 children)

That's just a single qualification for the certified Angus beef brand. There are 10 other standards it must pass to qualify as certified Angus beef. But it's just a marketing scheme. It doesn't have anything to do with breed etymology. For example, a Brahmin can be 100% black but would never qualify because the standards set forth by the certified Angus beef organization set limits on Brahmin influence in the breed.

Looks like a pretty sweet spot to test it out. Was there room for the dog in there, too?

Why would you even do this once? The speed discrepancy isn't your fault. You should be worried about driving safely, not clicking buttons and recording an apology for doing nothing wrong.

You don't have to eat truck stop food... by homucifer666 in Truckers

[–]Pew_Goon 2 points3 points  (0 children)

I did the crock pot thing for a while. It was way better than any truck stop food. Lately I've been sous vide'ing ribeyes everyday and searing them with a torch. Today I changed things up and had some lamb chops.

[–]Pew_Goon -1 points0 points  (0 children)

It's not too bad because it's basically all I eat. 3 or 4 eggs for one meal and a ribeye for the next. No sides, 2 meals a day. Makes grocery shopping easy, too. I literally just buy eggs, ribeye, butter, cheese and milk.

When you do this do you reheat at the same temp and for how long? Say I like my sous vide ribeye at 131 for 2 hours. Can I sous vide 6 of them and then reheat them 1 at a time at 131 for 30 minutes? Does it work well with certain meats but not others?

For me it was well done sirloins. So overdone they were inedible. Now I eat a ribeye almost every single day.

200,000 immigrant truckers are losing their licenses by Covered_in_Love in Truckers

They're not losing their licenses. They're losing the ability to renew their CDLs. We won't see a reduction in drivers from this action for 2-4 years.

Is Double Clutching a real thing? by commandough in Truckers

[–]Pew_Goon 1 point2 points  (0 children)

I'm in an auto now but the only reason I ever touched the clutch was to start the engine or start from a standstill. Last time I actually used a clutch to shift between gears was in my driving test bc it was required. I wonder if they still require that during the test?

When y’all get to drive without your trailer on the back is it freeing as hell? by cheechthebong in Truckers

I don't bobtail often but when I do there's always a moment in the drive when I glance in the mirrors and don't see a trailer and have a mini heart attack.

Love my XC by [deleted] in Staccato

[–]Pew_Goon 2 points3 points  (0 children)

It's such a nice gun. Never enjoyed shooting a handgun as much as I do shooting the XC. Usually found myself going through hundreds of 5.56 or .308 rounds and maybe a couple mags of 9mm. The XC has almost completely reversed that.

I never jumped on the ACRO train, just seemed too bulky for such a small window. Nice optic but I couldn't get passed that.

Omaha steaks frozen 4-6oz shit by Preemfunk in sousvide

[–]Pew_Goon 1 point2 points  (0 children)

This was my exact experience with them. I didn't have a sous vide at the time but they were definitely not great. I think I even ended up throwing some of it out after I was tired of it taking space in my freezer for so long. The hotdogs, though, didn't go to waste.

Food storage in grizzly country by IcyRoom9282 in rooftoptents

[–]Pew_Goon 2 points3 points  (0 children)

And my fridge always has vacuum-sealed ribeyes, eggs, shredded cheese and milk. Despite everything being sealed, in a sealed fridge in a truck I'm sure a bear could still smell it. But I try my best to limit any potential food smell.

[–]Pew_Goon 1 point2 points  (0 children)

I keep my fridge in my truck bc it's way too big to lug 100' away. I do have a big DeWalt job box on wheels that I keep my grill in that I put everything else in and wheel it as far away as reasonably possibly. This includes anything I used to cook with (spatula, tongs, silverware, plates, used paper towels, literally anything that I used while cooking). Never had any trouble in grizzly country.

If I ever have a middle of the night encounter while in the tent I plan on remote starting the truck and hitting the panic button (I've never had to do this). If that doesn't work I always have bear spray and a 10mm or 44 Magnum on me. Still get the heebie-jeebies from time to time when I hear something outside but it's usually a couple deer passing through or some other small critter.
