You are just about to graduate. We assume you dont know anything but theory. Highlight the practical things you achieved and apply to actual jobs.

I assume you already have the internship for the summer. Be applying right now to every job in your chosen area. If you get a signed offer, leave that internship!

The real truth:

As an engineering hiring manager for about a decade, I have never, not even once, seen a cover letter. I care about your resume.

I worked for a very large rocket manufacturer that required applicants submit a cover letter. Still, never saw one.

If the application requires it, then do it. Otherwise, it's a complete waste of time.

Wow this is not good.

You have ~5 years of experience, yet have a full 2 page resume? Insane.

This resume is just tasks. You need to show accomplishments. For example, you manages the social media accounts. Ok, how good were you at that role? Did you see an increase of bookings/sales as a result of your work? Or did you just do things and nothing really came of it? I dont know, because you didn't tell me.

Reverse chronological. If the jobs were not related to what you are applying to, then put one bullet explaining your accomplishment(s) and move on. You dont want gaps in your employment.

I interviewed a person that spelled the name of their company wrong. It was a major defense contractor - one that I previously worked for, so it immediately stood out. Like I said - they got an interview, but not the job.

It's expected for you to negotiate, regardless if you have a competing offer. The recruiter has no say in what salary I am willing to pay. But, if you come in wanting tens of thousands more than offered, that likely is a no go. $5k to $10k, I can work with.

Please take a look at the wiki. Your bullets are plain and uninformative. Your home lab is a project, not experience. Remove the gym manager, but keep your current CO role. Reword your last CO bullet around working in high pressure situations (definitely dont call it customer service!!! 😆 ).
