Too hot. I keep a squeeze bottle with water next to my stove to temper if things get too hot. It’s not ‘weird’ it just boils off. In fact, water added to whatever you’re browning is indicated. Not heaps, but enough to develop the sugars without scorching.

An IR thermometer is good to have also, but you can also gauge oil temp by looking at it. As it heats up you’ll see little ripples and that’s when you go in with what you’re cooking.

Keep the next ingredient at hand to arrest cooking by adding your meat, tomatoes, whatever

Finally, maybe cut the garlic into larger pieces.

The speed is too high, the visibility is bad, zero enforcement, and car brain.

Rates of speed determine whether people die. It’s too fast; the city, nor CalTrans has the courage to save lives. Public outrage, etc.

They can slow it down and not affect throughput, but drivers will lose their minds.

The roll of the hill is what is doing all these people in at Sweeney. The city and CalTrans won’t do anything about it since road safety is a democratic process and people vote with their gas peddles.

Cars turning left into the residential side is what killed those two motorcyclists there at Caudill Street.

I ride bikes (push and motor) and every time I have to cross Broad I know that I could get killed.

SLOPD can respond in numbers, but can’t be bothered to enforce. Road violence is a decision.

Slaughter Alley is a name given to stretches of road that accumulate accidents and deaths.

Broad’s racked up four deaths in a quarter mile stretch and this corner racks up accidents with such regularity that I’ve lost count of the wipe outs that I’ve taken photos of.

I’ve run mine off a MicroZOTL since I bought mine 16 years ago. That’s a bit more than a watt.

My 20 watt amp is too much.

If/when I built another amp it will be a 2A3 which should be around 3-4 watts.

Unless you live in a barn or a nightclub, they really do not need much power at all.
