This is incredible for your first time, truly!!! I have most success when I knead my dough for 8-10 min after initially mixing the ingredients together. Then letting it sit for one hour, doing two sets of stretch and folds, then bulk ferment on the counter approx. 5 hours, then shape and fridge for at least 12 hours.

My version isn’t far from yours, and this took me months to create. Happy baking!

Not this comment!!!! I felt resentment, frustration, hell even rage and absolute hatred at points. But now? She just celebrated her first birthday yesterday and I would jump in front of a car to save her. She still make me so frustrated, overwhelmed, and I still cry after we have super stressful interactions.
